If you ever wondered what to do with leftover lasagna sheets, my suggestions might help you:
- Make cannelloni. Cook your lasagna sheets in boilling water until they become flexible enough to be rolled up. If you are using fresh pasta, you can skip this step. Cut the sheets in half (assuming you are using the standard lasagna sheets you find in the shops). Place a couple of tablespoons of filling (now is the perfect time to get rid of the little bits of leftover meat you put in the freezer and make your own filling) along one edge and roll into a tube. Place all your stuffed tubes into a gratin dish, cover with sauce (tomato or cream based) and sprinkle with grated cheese. Cook in the oven at 180 degrees C for 30 minutes or until golden brown.
- Make tagliatelli. Par-cook the lasagna sheets until they are soft enough to be cut into lengths. Then, cook at usual.
