So, what do you do when your bananas get speckled black? Becoming far too ripe for most tastebuds, bananas will, more often than not, end up in the bin… or the composter if you have one. But you would be loosing out on a great dessert! This is also a really easy and delicious recipe you could make to impress your guests. You can even buy ripe bananas at a reduced price at the shop. All you need is vanilla ice cream, soft brown sugar (but white will do just as well), vanilla extract or sugar, some rum or Grand Marnier, possibly a handful of raisins and chocolate flakes (home-made of course using a grater) and butter.
Just peel your bananas, remove any black squashy bits and roughly slice the fruit.
Place a knob of butter in the frying pan. When melted, cook the bananas for a couple of minutes then add all the other ingredients (except for the ice cream and chocolate of course!) and keep stiring for another 2 or 3 minutes. You will end up with your banana slices coated in a thickish sauce.
That’s it! Divide the mixture into bowls, add one or 2 scoops of ice cream per person and decorate with the chocolate flakes.
