Easy and quick home-made sausage rolls

In this post, I will show you how to make your own sausage rolls. It is easy and quick and you will impress your friends and family.

First, you will need ready-made puff pastry (with savoury dishes, I prefer vegetable oil instead of butter-based puff pastry), one egg yolk and your favourite sausages.

Remove the skin with a pair of scissors or knife and roll the sausage with your hands, fingers flat, until about twice the size (if you use small sausages, you won’t need to).

Unroll the puff pastry and cut lengthways into three strips. Put the middle strip to one side to give you space to work the other two first and use a rolling pin (or a clean wine bottle without the label if you don’t have a rolling pin) to make the pastry strips slightly wider (so that it is large enough to go round the meat and a bit more).

Place the meat on a strip (one strip will take just under two rolled out sausages) and run some egg yolk with your finger along one edge (this works like glue so that the two sides of the pastry strip can stick together).

Wrap the pastry strip around the meat making sure you can seal both edges against each other (if it does not fit, make the strip a little wider or roll out your sausage a bit thinner).

Cut your wrapped meat to the required length and place, sealed side down, on a baking tray.

I used baking paper but you could also oil your baking tray instead. Dip two fingers in the egg yolk and run them quickly along each sausage roll (to give your sausage roll a nice golden colour when cooked).

Cook in a preheated oven at 180 degrees Celsius until golden brown (about 10-15 minutes). If you have any leftover puff pastry, make a cigar shape (as above, on the bottom right hand side corner of my picture) and cook it with your sausage rolls (you could even add some grated cheese before rolling it up).

Tip: par-cook your sausages for about 5 minutes until they are slightly brown. When cool, store in the fridge until ready to cook them again until golden brown for another 5 minutes. You will then have nice and hot sausages at your leisure.
