Pies are inexpensive and easy to make. It is a great way to use up leftover meat. Make one pie to feed 4 people or use half the pie to feed 2 and keep the other half for a cold packed lunch for 2 the following day. Below is a step-by-step picture guide on how to make the dough.
weight 180g of plain white flour
Add seasoning (salt+pepper) + 2 tb olive oil + fill a glass with cold water. Pour a little water on the side of the dish (about 1/4 of the glass)
Using only one finger, mix water and flour together (you want to handle the dough as little as possible)
Keep adding water , a little at a time, until the dough is combined.
Avoid over-mixing otherwise the end result would be tough to eat when cooked
Pour a little drizzle of olive oil at the bottom of the dish and wipe all over with half a piece of kitchen towel you don’t need a whole sheet!)including the edge.
Spread some flour on a clean surface (Tip: I use a round glass pizza tray which happens to be a good gauge because it is slightly bigger than the desired size of the dough disc)
Place the dough on top of the flour.
Turn it upside down to make sure it is well coated with flour so that it does not stick
Start rolling into a disc shape
To lift the dough, fold gently in half
Fold in half again
Place on dish and unfold gently
Fit the dough evenly around the edge, cutting long bits off to place/glue on top of shorter ones, making sure there are no holes anywhere in the dough. If so, just fix them by adding a little more dough!
