It takes me less than 5 minutes to prepare packed lunch, usually only a couple of minutes. I took a picture of my husband’s packed lunch, everyday from Monday to Friday hoping this will give you a few ideas. I choose fruit that can be prepared quickly and eaten without making any mess (juicy pears are out of the question!).
Monday: left-over beef casserole and rice from the night before + almonds and raisins in a pot + easy to eat fruit. Cut the kiwi in the middle but not all the way through so that the two halves stay together. When ready, pull apart and eat with a spoon like a yoghurt.
Cheese and pickle sandwiches made on the day.
Wednesday. tuna salad. I had cooked pasta in the fridge from the night before. Open a tin of tuna, a can of sweetcorn and cut a few cubes of cheddar. Then, add one large spoon of balsamic vinegar and 3 spoons of extra-virgin olive oil….
… mix together and place into a container with clip-on lid. Don’t forget to bring a spoon to eat it with!
Thursday: tuna salad (yep, I had prepared two pots!)
Friday: bacon wraps. I had cooked spaghetti carbonara the night before and put aside some crispy bacon. Take a wrap, spread mayonnaise, scatter the bacon pieces.Add some grated carrots…
… 2 wraps per person is a good amount.
