Why did it take me years to realise that I should never grill sausages in the oven because it makes such a MESS!?!…
So, here is my tip! To cook sausages and keep your oven clean, use a deep pan as follows:
Put a few drops of olive oil inside the pan and add the whole sausages. Cook on medium heat, turning the sausages regularly until evenly brown. Reduce the heat to prevent them from burning and after 10 minutes, they should be cooked through.
Alternatively, add one sliced onion at the same time as the sausages plus salt and pepper or a stock cube, heat up until slightly brown then, add some rice (I use basmati rice), about 80g/person. Stir quickly and add double the volume of boiling water. When the water is boiling again, reduce to low heat, place the lid on and cook for 10-12 minutes. Leave to rest for a couple of minutes and enjoy!
